Because of the production scale, commercial coffee beans might come from large farms or cooperatives with the focus on volume. This often means less emphasis on the precise conditions that affect bean quality, like altitude, soil, or harvesting method.

Commercial coffee is often brewed on commercial coffee machines built for high capacity and speed, prioritising efficiency over intricate flavour extraction. These machines are designed to deliver large quantities quickly, supporting fast service but sometimes at the expense of delicate taste nuances.

What is Speciality Coffee?

Speciality coffee, on the other hand, is all about quality, traceability, and craft. It represents the upper echelon of coffee, where beans are carefully sourced from specific farms or regions, often grown under ideal environmental conditions.

Speciality coffee producers pay close attention to every process step — from cultivation to harvest, processing, and roasting — to highlight unique flavour notes and characteristics. These coffees often have distinctive tastes that reflect their terroir, such as fruity, floral, or chocolatey undertones.

A key point about speciality coffee is its grading system. Beans are scored by certified graders and must achieve a high score (usually 80 points or above on a 100-point scale) to be considered specialty. This ensures a consistently high standard.

Key Differences Between Speciality and Commercial Coffee

1. Quality and Flavour

Speciality coffee tends to have a far more complex and vibrant flavour profile. You might detect delicate citrus notes, hints of berries, or subtle floral aromas. Commercial coffee usually offers a straightforward, familiar flavour, often described as ‘bitter’ or ‘roasty’, designed to appeal to the masses.

Speciality coffee prides itself on transparency. You’ll often find detailed information about the farm, region, altitude, and processing methods. Commercial coffee, in contrast, is usually a blend from multiple sources, making it harder to trace or guarantee consistent quality.

Roasting styles also differ. Speciality coffee roasts tend to be lighter to medium, preserving the unique flavours of the beans. Commercial coffee is often roasted darker to mask inconsistencies and create a uniform taste.

4. Price and Accessibility

Because of the meticulous sourcing and smaller production scale, speciality coffee is typically more expensive. Commercial coffee is widely accessible and more affordable, which explains its prevalence in supermarkets and chain cafés.

Commercial coffee, while less nuanced, plays an important role by providing consistent, affordable coffee to a broad audience. It’s ideal for quick service environments where speed and volume are priorities.

It’s worth noting that even the best beans won’t shine without proper brewing. Speciality coffee often requires precise techniques — the right grind size, water temperature, and brewing method — to unlock its full potential. Commercial coffee, designed for simplicity, is often more forgiving but won’t deliver the same flavour complexity.
